Azienda Agraria Giusy is located in a town called San Vito between the municipality of Magione and Passignano sul Trasimeno in Perugia, Italy.
The property extends itself approximately 8 hectars and is located on the hill slopes that surround the Trasimeno Lake where its possible to find different types of secular olive-trees such as:
The grounds surrounding the Trasimeno Lake have tectonic origin. They are highly suitable for farming, and are particularly special for the cultivation of the olive tree. The earth in this area is naturally consists of clay, allowing the trees to maintain constant moisture while the rocks allow for natural drainage during periods of higher rainfalls. Thanks to this unique soil composition, and the excellent exposure to sunlight, it's possible to produce of some of the highest quality Extra Virgin Olive-Oil.
The trees’ branches are subjected to annual pruning for production, and subjected again every 5 years for overall plant rejuvenation, giving new life to the plant. Additionally, the grounds are manured every 3 years using natural elements from the manurer of local sheep which is purchased directly from breeders of the surrounding area in order to maintain a natural cycle. To this same effect, the nearby vegetations, that grow spontaneously during the year, are regularly cut and use as a natural fertilizer.
The ancient trees on the property are proof that much older civilizations also found these locations to be the best habitat to obtain high quality oil. Today we continue this long tradition of high quality production in olive oil excellence.
